I finally founded a gluten, dairy and grain free bread which is actually good!
Not too heavy, not too densy and tasty!
So if you wanna go Paleo or just remove gluten from your alimentation, try this bread, full of proteins and fiber.
You will need:
6 organic eggs
1 tablespoons of raw honey
1/2 cup of coconut oil (or ghee if you want a dairy version)
1/2 teaspoon of sea salt
1 teaspoon of baking soda
3/4 cups (around 96gr) of coconut flour ( I actually put a bit less of coconut flour and mix it with flax seed meal)
Heat the oven at 180ºC. Grease rectangular loaf pan.
Mix the eggs, honey coconut oil and salt.
Combine coconut flour with the baking soda with the liquid mixture until there are no lumps.
Pour into your loaf pan and bake for around 30/40 minutes.
